Batch Four is a marriage between whiskies primarily matured in first-fill Oloroso Sherry firkins, later racked into less active refill bourbon casks. Distillation (2.5x) was done in our 100l still throughout 2021. Expect toffee, red apples, vanilla, pencil shavings and a light, smoky backbone. 

Barley: Planet, locally grown at Ballavell farm, 2020 and 2021 harvest.

Yeast: Lallemand DistilaMax MW & WHC Labs Bonds Ale

Distillation: 2.5x. Only the 100l still was used. 

Cask: First-fill oloroso firkin, first-fill bourbon, small proportion of ex-Islay casks.

Age at bottling: 4 years. 

ABV: 56.9%

Number of bottles: 90

Non-chill filtered, natural colouring and bottled at cask strength.

Each bottle contains 50cl and costs £82.
