This tasting was held at Scott’s local - The Sidings in Castletown - on Friday 8 August.
The line-up was:
Ale cask
Barley: Planet, locally grown at Ballavell farm, 2021 harvest
Yeast: Bonds ale yeast- fresh and recycled
Distillation: 2.5x and 2x, 100l still only
Cask: Refill bourbon that has held our own home-brewed strong ale
Age: 3 years 6 months
ABV: 57%
Palo Olo
Barley: Planet, locally grown at Ballavell farm, 2020 & 2021 harvest
Yeast: Pinnacle M, MG+ and Bonds ale yeast- fresh and recycled
Distillation: 2x, both stills (100l and 400l)
Cask: 95% Palo Cortado, 3.5% Oloroso, 1.5% bourbon – all firkins
Age: Minumum 3.1 years (with oldest components 4.5 years)
ABV: 57%
Amontillado
Barley: Planet, locally grown at Ballavell farm, 2021 harvest
Yeast: Pinnacle M, MG+, Lallemand DistilaMax and Bonds ale yeast- fresh and recycled
Distillation: 2x, both stills (100l and 400l)
Cask: 95% Palo Cortado, 3.5% Oloroso, 1.5% bourbon – all firkins
Age: 2 years Amontillado firkin, 1 year refill bourbon
ABV: 55%
Batch Two Event - November 6, 2024
The event was held at Santander Work Café in Douglas and the following line-up was sampled:

Our launch event took place at 5:30pm, 14 December, 2023 at Santander WorkCafe, Market Hall, Douglas. It was a blast - thanks to everyone who attended!

Cask: Small european oak casks (3-10l) and refill bourbon firkin which previously held a peated Speyside whisky
