Our Winter Dram (named Palo Olo, after the casks it has been matured in) will be available from Monday, 3 December, 2025, in some of our favourite places around the Isle of Man. If you fancy trying it, head over to any of the following:

This previously unreleased whisky is a dark, rich, sherry-matured dram, perfect for those cold winter evenings. Here are the details:

Barley: Planet from Ballavell Farm, Isle of Man, 2021 harvest.

Yeast: Pinnacle MG+, WHC Labs Kveik, Wild indigineous yeast

Distillation: 2x (with some minor parts 2.5x distilled). Both the 400l and the 100l stills were used. Disillation primarily done in June 2022 with some components in Feb/March 2021. 

Cask: First fill Palo Cortado Sherry Firkin (95%), First-fill Oloroso Firkin (3.5%), First-fill Bourbon Firkin (1.5%)

Average age at bottling: 3.4 years

ABV: 56.3%

Number of bottles: 10

Non-chill filtered, natural colouring and bottled at cask strength.

This whisky is only sold by the dram via selected venues on the Isle of Man.
